Chicken and Corn Chowder

As much as I love a good clam chowder, unless you are going through the trouble of getting, cleaning and perping fresh clams, there's not much point in making clam chowder. But a nice corn chowder has a very similar flavor profile, and is lighter and easy to make with fresh summer corn, or even canned if you are lazy. I had some skinless, boneless chicken I tossed in for extra protein. Enjoy!

Ingredients:

8 strips of bacon, diced
1/2 a large onion, diced
2 T flour
6 small potatoes (I used red, but it doesn't matter), diced
2 cans of corn
12 ozs chicken, diced
4 C chicken stock
1 C milk
2 t Cumin
1 bay leaf
1/2 t paprika
1/2 t cayenne
salt and pepper to taste. 

Render the bacon in a large stockpot or saucepan, put it aside and leave a small amount of fat in the  pan. saute the onions till tender, add flour and spices. Cook for a few minutes, till you can't smell the flour anymore. Add the chicken stock, potatoes and chicken, bring to a boil. reduce to a simmer. When potatoes are tender, add corn, and milk. salt and pepper to taste.

It's a really easy recipe, you can adjust the quantity of the spices, corn, chicken. you can toss anything else in that you have in the fridge. You can also use cream for a more indulgent chowder.
