I heated up a couple of tablespoons of vegetable oil in a non stick skillet till the oil shimmered, over medium high heat. I lightly dusted the fillets in flour and fried them for 2 – 3 minutes on one side (till golden brown) and then 1-2 minutes on the other.
The fillets were beautifully browned, crispy and the flesh was tender and delicious. You can make a pan sauce with butter, lemon juice and capers, if you would like, but I just did a squeeze of lemon on top. I was very pleased with the result.
