Pan fried Flounder

I usually cook dinner on Thursdays, so during the day I like to meander around Whole Foods looking for inspiration. They had wild caught flounder for $9 a lb (regularly $15). I had never cooked flounder before, but I was up for trying something new. I got 4 fillets, about a pound total for the 2 of us. For $1, I had them marinade the fish in their Mediterranean herb marinade.

I heated up a couple of tablespoons of vegetable oil in a non stick skillet till the oil shimmered, over medium high heat. I lightly dusted the fillets in flour and fried them for 2 – 3 minutes on one side (till golden brown) and then 1-2 minutes on the other.

The fillets were beautifully browned, crispy and the flesh was tender and delicious. You can make a pan sauce with butter, lemon juice and capers, if you would like, but I just did a squeeze of lemon on top. I was very pleased with the result.
