This is the easiest recipe ever for quiche. It's from an episode of Good Eats and it's so versatile. You whisk 2 eggs w/ 1 cup of heavy cream, salt and pepper to taste. This is the basic custard. You can add any protein (ham, bacon, sausage, chicken. Turkey, etc.) with veggies (spinach, onion, garlic, olives, mushrooms, peppers, asparagus or anything else) and a cheese. Pour it in to a frozen pie crust, bake for 35-40 minutes in a 350 degree oven and voila, you have a quiche.

Bri and I are doing food for bridge night again for May. We are doing a breakfast for dinner theme. I made four quiches for tonight:

  1. sausage and caramelized onion

  2. ham and four cheese

  3. spinach and mushroom

  4. mushroom and olive

Simple, easy and tasty, try it for your next brunch gathering.

On a funny side note, some one said to me tonight, “hey, I went to this great dim sum place in Brighton called Gitlo's, have you heard of it?”
