Prime rib sandwiches, of course! I took sweet Vidalia onions, sliced thinly, and caramelized them, tossed in the sliced prime rib, piled it all on to an Iggy’s black pepper brioche roll and then layered fontina cheese over it. Absolutely delish. Although with 4 lbs of meat, it’s a lot of sandwiches. R said to me today, “Can we have something else for lunch? I’m a little sick of prime rib.” He’s so spoiled.
