Vosges Haut -Chocolate makes upscale chocolate bars using ingredients not traditionally paired with chocolate, such as wasabi, curry powder, olives and chilies. I've tried a bunch, some of them are surprisingly good, others not so successful. My favorite is the Barcelona with hickory smoked almonds and fleur de sel gray sea salt. Their newest creation is Mo’s bacon bar, made with Applewood smoked bacon, Alder smoked salt and deep milk chocolate. I’ll let you know the verdict when I hunt some down.
