This is a nice twist on your standard oatmeal cookie. It is lighter and the orange zest gives it an additional depth of flavor that surprises people. I like to use golden raisins because they are juicier and plumper than standard raisins. I usually make a double batch, and sorry the ingredients are all in metric, but it's a French recipe. Enjoy!
Oatmeal Orange Raisin Cookies
125g flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
100g brown sugar
125g sugar
125g unsalted butter
1 egg
1 teaspoon vanilla
1 tablespoon milk
1 teaspoon orange zest
1 teaspoon grand marnier
160g oats
125g raisins
sift flour, baking soda, baking powder, salt.
cream sugars and butter.
add egg, vanilla, milk, grand marnier.
stir in sifted ingredients. mix well.
stir in orange, oats, and, raisins.
bake 10-12 minutes at 350 degrees.
