I had a mixture of sautéed onion, spinach and mushroom leftover from the brunch. I also had leftover Italian sausage so I diced it up and beat in 2 eggs and combined everything with ricotta. I had some homemade tomato meat sauce in the freezer. I did three layers of sauce, noodles, ricotta mixture and cheese. Cover and bake at 375 for 40 mins and enjoy! It was really good and the fridge is a little cleaner.
